Quinoa Tabbouleh My Way
1 cup cooked quinoa
red bell pepper
juice of 2 lemons
1. Chop fresh vegetables and parsley.
2. Mix quinoa, vegetables and parsley.
3. Stir in a healthy dash of olive oil and lemon juice.
4. Salt to taste.
5. Top with feta.
