roasted chickpeas my way.

I am always in search of a healthy, cheap snack.
So yeah.  We love these.

Roasted Chickpeas My Way

Canned Chickpeas, rinsed and dried
Olive oil
Salt, pepper, any spices you want to use!

1. Preheat oven to 350.
2. Toss chickpeas in just enough olive oil to evenly coat the beans.
3. Season with your chosen spices.
4. Place chickpeas on a baking sheet and cook until super crunchy, 45 minutes or longer.

I love roasted chickpeas! They're so good for a snack. I bring mine to work sometimes and my coworkers are always so curious about what I'm eating. Those and homemade kale chips!

We make this a lot. I really like honey roasted garbanzos the best! YUM!

Since our freezer has decided to quit working (yeah, glad I haven't really grocery shopped much lately), I have 3-4 quart bags of frozen cooked chickpeas (i buy those in bulk, cook em, bag em and freeze em) that I need to do something with asap. I think half will be roasted now! I'm thinking maybe some with a little spice and some sweet. :)

Alisha, the beans are a blank slate so you can use whatever spices you like. I tend to like Indian flavors so turmeric and cumin sounds good to me. Or you could use red pepper to make them hot.

Going with Mandi's honey thought, honey and cinnamon sounds tasty to me.
