Coconut Curry My Way.


(1) can of unsweetened coconut milk
almond milk
onion, minced
garlic, chopped
whatever vegetables you want, chopped - I used carrots, broccoli, cauliflower, and potato
spices - curry powder, turmeric, paprika, cumin, salt, pepper
olive oil


1. Heat olive oil in wok.
2. Saute spices, onion and garlic.
3. Add coconut milk and vegetables.
4. Add enough almond milk to cover vegetables.
5. Cook until vegetables are fork tender.


Serve over brown rice.
